For Patrick and Christina, or anyone else who enjoys a little marshmallow, chocolate, peanut butter, etc.
7 Graham Craker rectangles
2 1/2 c. mini marshmallows
1 pkg. (12 oz. or 2 cups) semi-sweet chocolate morsels
2/3 c. light corn syrup
3 T. butter or margarine
1/2 c. crunchy peanut butter
3 c. Rice Crispies
1. Coat 9x13 microwave safe dish with cooking spray. Arrange graham crackers in a single layer over bottom of dish, breaking crackers as needed. Sprinkle with marshamallows.
2. Microwave on high about 1 min. or until marshamallows are puffy. Cool completely.
3. In 2 quart microwave safe bowl combine chocolate chips, corn syrup and butter. Microwave on high about 1 min 30 sec. or until chocolate is melted, stirring every 30 sec. Stir in peanut butter. Add rice crispies, mix until combined.
4. Spread evenly over marshmallows. Cover and refrigerate about 1 hr. or until firm.
